There were additional issues that the culinary school had about accepting Louis into their program. They were afraid that his presence would pose a “health and safety risk” in the kitchen.
Considering that the stoves were too tall for Louis, he would need to use a stool – and they were afraid that having a stool in the kitchen could lead to possible disasters. They may have had their reasons, but they were destroying Louis’ dreams, who said he felt “humiliated.”
