Batali says that the biggest rule in his family was a mandatory attendance at family dinners. He says that the family never went out to eat (except on very special occasions), and that there was fresh food on the table every day. “All the holidays were at our house,” he says. “You were required to be there, you had clean hands and a clean shirt. There was no variation. There wasn’t even the idea of variation.” He says that rule inspired his family-style restaurants. Although he poses here smiling with his staff, many of his former employees have since accused the boss of serious misconduct.
